I couldn't resist myself to try out a part of the lemon cake for some cute cake balls. It's always fun to make them. It tasted really good. I love the combination of lemon and apricot. Very nice.

Do you see the color of the pink chocolate? It's like a hot pinkish color. Totally awesome! I've drizzled some light green chocolate on top. I love the contrast of the colors. Don't you?

Ingredients

lemon cake a few teaspoons of apricot jam Candy Melts or chocolate with a high precentage of cocoa 70%

Directions

Crumble the cake into a large bowl using your hands of standmixer. Add the apricot jam and mix until well combined. Line a baking tray with wax paper. Form balls with the cake mixtureplace the baking tray in the freezer for at least 30 minutes. Melt the chocolate in the microwave, stirring every 5-10 seconds until smooth (if you have trouble with melting your Candy Melts you can use a bit of powdered cocoabutter or Crisco). Remove the balls from the freezer. Dip the cake balls into the melted chocolate (you can use a toothpick for this). Place them onto a tray with wax paper. Once you have covered all the balls in chocolate coating place the tray in the refrigerator until the chocolate coating is set. At this point you can drizzle other chocolate on the balls for decoration.
